Pizzelle
3 eggs
1/2 teaspoon anise (anise is more authentic) or vanilla extract
2 teaspoons baking powder
1 teaspoon pure vanilla extract
1 3/4 cups all-purpose flour
1/2 cup butter, melted and cooled
3/4 cup sugar
Preheat Pizzelle iron
In large bowl of electric mixer, at low speed, beat all ingredients until well blended. Spoon a heaping tablespoonful of mixture onto center of pizzelle iron; cover and bake until golden-brown, about 30 seconds. Lift cover; with fork, carefully loosen pizzelle. Place on wire rack to cool. Repeat with remaining batter.
