When we take a loaf of bread from the supermarket shelf to put it in our shopping trolley/cart, we are holding the result of a long
series of events that have led to this food product (Wrigley, 2016b). These successive events can be summarized as the ‘grain chain’
involving the essential contributions of plant breeders, grain growers, grain marketers, processors, nutritionists, and retailers. The
quality (or otherwise) of the grain-based food item depends on the successive contributions of all these people and processes.
They are summarized in Figure 2.
