4. Results and discussion
4.1. Determination of plant sterols
In the beverages subjected to study, the phytosterols campesterol,
stigmasterol and β-sitosterol, and the phytostanols campestanol and
sitostanol, were identified and quantified. In the MFbB and FbB samples
(enriched with the source of esterified sterols), brassicasterol was
also detected. As an example, Fig. 1 shows a GC–FID chromatogram of
the PS in the MFbB sample.
