Meat from goat supplemented with MOL exhibited the most efficient scavenger of the radical (93.51%) compared with the control diet (GH=70.15%). In this study, meat from goats supplemented with MOL, SC and GH had a significant effect on the lipid oxidation generated in the meat samples (P≤0.05).
Meat from goats supplemented with MOL had the highest percentage of inhibition (47.90) against lipid oxidation than the meat from SC supplemented goats (20.27). Meat from goats supplemented with GH exhibited the lowest percentage (11.03) of LOI (Table 5).
All the dietary supplemented meat samples significantly increased the activity of SOD with MOL showing higher percentage inhibitory (93.13%), SC (88.88%) and the control diet GH (67.50%).
