2.4. Analysis of sample
The amount of batter adhering to the sample during
immersion coating prior to frying was considered as the
coating pick up and calculated as the weight of coating
picked up by a carrot slice, divided by the weight of non coated
slice and multiplied by 100. Weight of coating
picked up was determined from the decrease in weight
of batter suspension after coating of a carrot slice and
allowing drip for 30 s.
