A standard texture analyzer (Lloyd Instruments, TA
Plus, UK) was used to evaluate the fracturability of
products, which is defined as the force at the first significant
break in the first positive bite area of the Texture
Profile Analysis curve. A conical plunger (D = 0.016 m,
H = 0.015 m) was attached to the crosshead for penetration
test. The instrument was set to a speed of 55 mm/
min for penetration of conical probe into 25% of the
fried sample depth. Texture analysis was performed
15 min after frying using a load cell of 50 N.
