Protein content was found to range from 30.9% to 37.8%, the
lowest value being measured in the seeds of Uchiki Kiuri, and the
highest in the seeds of Amazonka. Both of these cultivars belong
to the species C. maxima. The mean values of protein content calculated
for the varieties of C. maxima (35.6%) and C. pepo (34.4%)
show slight differences. According to El-Adawy and Taha (2001),
protein content in the pumpkin seed amounts to 36.5%, and that
in the watermelon seed to 35.7%. Both of these values are comparable
with those obtained in the study reported on in this paper
